Leaving the head on a butchered animal is a common practice in Taiwan.  Although considered distasteful by most shoppers in the West, it serves many purposes that makes total sense once you understand the reasoning.

1.  Asian shoppers insist on freshness and healthy ingredients.  There are tell-tale signs of disease in the head that may appear no where else in the animal.  The eyes for example are windows into the health of the animal and you should always look for clear eyes and general health.

2.  There are powerful metaphors about the nature of food in Asian cultures, and the head represents a beginning.  You must always start at the beginning in every effort.  Cutting corners is not considered wise.
 
PORK - BLACK HAIRED PIGS ARE SUPERIOR   á
Chef Yang of the Landis Hotel in Taipei says that black haired pigs are far superior to the white haired ones.  When freshness counts as much as it does in Asian cultures, you can expect the chef to be up close and personal with the ingredients.  Chef Yang personally handles, inspects, and smells each of the key elements of a meal.  In this clip, you will see that there is a real difference in the product - using your senses of touch, sight and smell, you too can get the best pork - but you better be ready to go one-on-one with your food.

The gender of a chicken defines the best use according to Master Chef Yang of the Landis Hotel Taipei.  Roosters are considered too tough for most dishes, but are perfect for soups or stews.  If you want a juicy piece of chicken for your central dish, females are the way to go.
 
PROCESSING - A DIFFERENT APPROACH IN ASIA   á
Processing of food is quite different in Asia.  Animals are slaughtered just before the time they are sold, and those ingredients find themselves very quickly in a pot.  The concept of Western mass slaughter operations with their unsanitary conditions are considered disgusting and foolish by our Asian counterparts.  A chicken for example is processed very much like our ancestors would have done.  Once slaughtered it is put into boiling water and the feathers removed.  It goes on sale while still warm, and remarkably free from Salmonella.
